Ingredients:
For the salad:
- 1 cup quinoa, rinsed
- 1 cup green or brown lentils, rinsed
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup sunflower seeds
For the dressing:
- 1/4 cup tahini
- 1/4 cup fresh lemon juice
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 2 garlic cloves, minced
- Salt and pepper to taste
- Water to thin, if needed
Instructions:
- Cook the Quinoa: Combine 1 cup of quinoa with 2 cups of water in a medium pot. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed. Fluff with a fork and set aside to cool.
- Cook the Lentils: In another pot, combine the lentils with 3 cups of water. Bring to a boil, then reduce the heat and simmer for about 20-25 minutes, or until tender. Drain and set aside to cool.
- Prepare the Dressing: In a small bowl, whisk together the tahini, lemon juice, olive oil, maple syrup, garlic, salt, and pepper. Add water, a little at a time, until the dressing reaches your desired consistency.
- Assemble the Salad: In a large bowl, combine the cooked quinoa and lentils, bell pepper, cucumber, cherry tomatoes, red onion, parsley, mint, and sunflower seeds. Drizzle the dressing over the salad and toss to combine.

2. Chia Seed Pudding with Almonds and Fresh Berries

Instructions:
- Prepare the Pudding: In a bowl or jar, combine the chia seeds, almond milk, maple syrup, and vanilla extract. Stir well to combine.
- Let It Set: Cover and refrigerate for at least 4 hours, or overnight. The chia seeds will absorb the liquid and create a thick, pudding-like consistency.
- Serve: Once set, give the pudding a good stir. Divide it into bowls or jars and top with sliced almonds and fresh berries. Enjoy!
3. Nutty Lentil and Seed Patties
These hearty lentil and seed patties are packed with protein and flavour. Perfect for a satisfying lunch or dinner, they can be enjoyed on their own, in a wrap, or on a bed of greens.
Ingredients:
- 1 cup cooked green or brown lentils
- 1/2 cup cooked quinoa
- 1/4 cup ground flaxseeds
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/2 cup walnuts, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp tamari or soy sauce (gluten-free if needed)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- Olive oil for frying
Instructions:
- Combine Ingredients: In a large bowl, mash the lentils with a fork or potato masher until mostly smooth. Add the quinoa, ground flaxseeds, sunflower seeds, pumpkin seeds, walnuts, parsley, cilantro, onion, garlic, tamari, olive oil, smoked paprika, salt, and pepper. Mix until well combined.
